My Cherished Pancake Recipe

I am sure that many of you have a cherished recipe that has been handed down through the generations. Well, mine is a simple pancake recipe that never fails and offers – comfort on a plate!

This recipe comes from an ancient recipe book and as you can see from the picture, it has seen better days. I have even typed it out and brought it into the modern world on my computer, so I don’t lose it.

Whether you call it a pancake, a flapjack, or a crumpet, few foods can rival the comforting feeling that this treat brings to your senses and soul. Pancakes hold a unique place in the world of comforting indulgences, encapsulating the essence of warmth, sharing, and a loving home.

My Pancake Recipe

You need

  • 2 cups flour
  • 1 3/4 cups milk
  • 4 teaspoon Royal Baking Powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/2 oz butter
  • 4 tablespoons sugar

Follow these steps

  • Beat egg and sugar well
  • Add half the milk and the melted butter
  • Gradually sift in dry ingredients and mix well to prevent lumps forming
  • Add the remainder of the milk to make a smooth batter
  • Pour spoonfuls onto a hot griddle or oven plate
  • Cook until small bubbles form on the top
  • Flip the pancake over and cook until golden brown
  • Place into a warm oven and continue making pancakes until you have used all the batter
